CHARGRILLED TOMAHAWK W/SWEET POTATOES

Here’s a recipe for a delicious Tomahawk steak and grilled sweet potatoes cooked on a Primo Ceramic Grill:

Ingredients:

For the Tomahawk Steak:

  • 1 Tomahawk steak (about 2-3 pounds)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme

For the Grilled Sweet Potatoes:

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 teaspoon paprika or cinnamon for added flavor

Instructions:

Preparing the Tomahawk Steak:

  • Take the Tomahawk steak out of the refrigerator and let it sit at room temperature for about 30 minutes before grilling. This will allow for more even cooking.
  • Season the steak generously with salt and pepper on both sides. Drizzle olive oil over the steak and rub minced garlic on both sides. Add fresh rosemary and thyme sprigs on top of the steak for added flavor. Let it marinate while you prepare the grill.

Preparing the Grill:

  • Prepare your Primo Ceramic Grill for two-zone cooking. Set one side of the grill for direct heat and the other side for indirect heat. Preheat the grill to medium-high heat, around 400°F (200°C).

Grilling the Tomahawk Steak:

  • Once the grill is hot, place the Tomahawk steak over the direct heat side. Sear the steak for about 2-3 minutes on each side to get a nice crust.
  • After searing, move the steak to the indirect heat side of the grill. Close the lid and continue cooking for about 20-25 minutes or until the internal temperature reaches your desired level of doneness (about 130°F (54°C) for medium-rare).
  • Once done, remove the steak from the grill and let it rest for about 10 minutes before slicing. This allows the juices to redistribute and ensures a juicy steak.

Grilling the Sweet Potatoes:

  • While the steak is cooking, prepare the sweet potatoes. Wash and scrub the sweet potatoes thoroughly. Cut them into slices, about ½ inch thick.
  • In a bowl, toss the sweet potato slices with olive oil, salt, pepper, and any additional seasoning of your choice, such as paprika or cinnamon.
  • Place the sweet potato slices directly on the grill grate over indirect heat. Grill for about 8-10 minutes per side, or until they are tender and have nice grill marks.
  • Once grilled, remove the sweet potatoes from the grill and serve alongside the Tomahawk steak.

Serving:

  • After resting, slice the Tomahawk steak against the grain into thick slices. Serve the juicy steak with the grilled sweet potatoes and your favorite side dishes or sauces.
